With regards to oxidiser vs fuel, it's all relative. Everything has a reduction potential, as in how much energy it takes to reduce something. If something is more easily reduced than another, it can be used by the second material as an oxidizer. Magnesium happens to be way up there, and can probably use some part of the MSG as an oxidizer. Perhaps the CO2 given off from the amino acid.
A similar situation exists in Zn and S in the rocket formulation. Both are traditionally fuels.
