Maybe some string soaked in ethanol or a similar low toxicity alcohol would do the job, might be an idea to place a non flammable tray under your candle lance-work to catch the burning string and candle wax. I've used a similar method for lighting rockets (outside ofcourse).

I'd suggest doing some tests first.
One of my tests would be using le Maitre Flash Cord (string). It lights from an igniter or match and is "instant" like quickmatch. Whether it would actually pass fire reliably to each Ice Fountain is something that you would need to test. Maybe I'd try to use NC Lacquer (ebay guitar lacquer) to connect each ice fountain to the flash string.
Flash string is available from your local leMaitre stockist. You get very little in a pack for lots of money but it's instant and nominally smokeless (10ft for £15 +vat etc) IIRC it is supplied wet in a foil pack and must be dried carefully before use.
Remember that there is nothing that burns without any smoke, Flash cord and ice fountains come close, but once you have done proof of concept tests you need to check for smoke detectors in the location of intended use.
Remember that this is my test schedule for my choice method on my insurance with me firing it. You need to check it for yourself and check that you are happy with it on your insurance.
